Soak the peas in water for 8 to 12 hours before putting them to sprout. Pea sprouts have high levels of vegetable protein and antioxidants and are rich in potassium and phosphorus. They are known to stimulate the metabolism. They are especially good tasting in pasta or risotto dishes, in soups or in a mixture of meatballs.
